Yeah, i dont mind that much though. The extra 1GB or so will come in handy sometimes. The only place i could get a single 1GB stick for the RAM i have would be ebay and it would most likely be used, so i might as well spend that $20 more and get a full 2GB kit.
I don't think your current processor is too slow to handle a newer card and I think you'll get a good increase in game performance. Last time I checked the 5600+ wasn't too far off from an E6600/E6750 as far as games are concerned.
